Interesting facts
Perch
Perch is a popular freshwater fish that is prized for its tender, white meat. Its delicate taste – a fine sweetness with a mild spicy note – and its firm and succulent consistency make it a well-liked fish, whether for grilling, frying or steaming. The perch pairs perfectly with our crispy Fischhaus sauté potatoes, our fluffy mashed potatoes or the fine apple and onion vegetables. A touch of lemon complements the natural sweetness of the fish.
Trout
Trout is an extremely popular fish that is not only delicious, but also very healthy. Its pale pink to light-coloured meat is low in fat and rich in omega-3 fatty acids. Trout is characterised by its mild, delicate taste, which is the result of its natural way of life in clear, cool waters, making it a highly versatile fish. It goes really well with fine herbs. Enjoy our trout refined with basil, dill and lemon – a trio that perfectly complements its flavour. Add a cucumber salad, our crispy sauté potatoes and a wonderfully light mustard sauce and you will simply wish for trout forever.
Matjes
Matjes is a particularly mild herring and a real delicacy due to the special way in which it is matured. It owes its highly delicate meat and its characteristic, mild taste – a slightly salty note and a fine, almost creamy texture – to this special maturation process in brine. Here at the Fischhaus, you can enjoy matjes traditionally prepared with home-made sauté potatoes and onion and apple sauce Hausfrauenart, or housewife style. A fresh, green salad also goes perfectly with it. Matjes is the Dutch national dish and a proper speciality: light, flavoursome and, as they say in the Netherlands, echt lekker! (or ‘really tasty!’)
Char
Char is a classic freshwater fish renowned for its tender, salmon-coloured meat and its high content of omega-3 fatty acids. Its taste can be described as fine, mild, slightly nutty and delicate – perfect for frying or grilling thanks to its firm yet succulent texture. Char pairs particularly well with our fresh spinach leaves and buttery mashed potatoes, refined with saffron. A hint of lemon and a good white wine as an accompaniment perfectly round off the fine taste of our char fillet.
Hake
Hake is an exceedingly popular and lean predatory fish that is prized for its tender meat. Its fine texture and mild taste make it a real all-rounder in the kitchen. And best of all? It is also healthy – containing vitamins B1 and B2 as well as calcium. Whether as part of our large fisherman’s platter or served with our colourful Fischhaus salad, its wonderful flavour can be combined in a variety of ways. Add a dry or off-dry white wine and this light fish dish is simply perfect!
Plaice
Plaice is an absolute classic on any fish menu. It is hard to imagine north German cuisine without freshly caught plaice. Both its particularly tender, white meat with its incomparably mild, slightly sweet taste, and its fine texture, which comes into its own when fried or steamed, make it a wonderful speciality. We serve it with our traditional bacon lardons, crispy Fischhaus sauté potatoes and a fresh cucumber salad. As an accompaniment, we can recommend a fresh, chilled white wine!
Zander
Z for tender zander. This classic freshwater fish, also known as pikeperch, is renowned for its mild taste and fine yet firm texture, which makes it ideal for frying, grilling or poaching. Descriptions of its flavour range from subtle and slightly nutty to pleasantly spicy. Here at the Fischhaus, the delicious taste of its fried skin goes perfectly with beetroot vegetables, buttered mashed potatoes and saffron sauce. A squeeze of lemon gives the zander a fresh note, making it a perfect main course for real gourmets.
